So wondering what's for supper?? Well here is a great idea I made today for my family and it was very good and its pretty simple as well.
Stuffed Bell Peppers

There are so many different types of peppers, Jalapeno, Mustard, Habanaro, Aji, Piri and the most common of them all... is the Bell pepper. They are used many different ways and are part of a wide variety of dishes such as blah blah blah and blah blah blah, blah blah. You didn't read this for a history lesson you read to learn how to stuff them with cheese and beef and all that good stuff for a delicious dinner. So here it goes.

2. Prepping The Peppers And Making The Filling
These are the 5 peppers that I made, 2 green, a red, a yellow and an orange. I cut the tops off them and removed the core and all the seeds. After that you can put them in the oven and if your oven has a broiler you will want to use it, if not its no big deal it will work either way. Take them out when they soften and, if your using a broiler, they will go dark around the edge.It should take 10-15 minutes and then remove and let
cool for a minute or two.

The filling I made is rather simple but I suppose it is up to you on what you stuff them with. You could do a vegetarian and stuff it with veggies or maybe tofu if you wanted.
What I did was I cooked off 1 pound of ground beef and diced up the top of my 5 peppers, minus the stem, and threw them in. It would also be tasty with some chopped onions and tomatoes but I didn't have any on hand.
3. The Stuffage!!!
Once the filling and pepper are done, it is finally that time... take a table spoon and carefully start to scoop the filling into each pepper until they are all full or you run out of the filling. This is where the stability of the peppers comes into play. The red pepper i got would rather lie on it's side so I had to lean it up against the yellow. (Insert Bill Withers singing "Lean on me" here)
After they are all full or as full as they are going to get you can add some shredded cheese on top and some green onion and put it in the oven just to melt the cheese. I wasn't a huge fan off the green onion on top, next time I would probably mix it into the filling.
4. On The Side
I chose to make some packaged noodles as a side for the peppers but you could really make anything as again, it is up too you. Potato wedges was another option I considered or there's fries, rice, garlic bread, or maybe a nice side salad.
